Like the iconic Harris Tweed cloth created here for generations, our whisky is woven from the hands of island people and the place we call home, intimately intertwining to produce an elegant spirit of complexity and character. This special connection between people and place continues to this day, with every drop created by Isle of Harris hands here in the Outer Hebrides. Our recipe uses spirit matured in ex-bourbon casks, oloroso and fino butts.\u003c\/p\u003e\n\u003ch3\u003eTHE INFLUENCE OF AN ISLAND\u003c\/h3\u003e\n\u003cp\u003eWe believe our water sourced from \u003cem\u003eAbhainn Cnoc a’ Charrain\u003c\/em\u003e is the \u003cstrong\u003esoftest of any Scottish distillery\u003c\/strong\u003e. Only very low sodium and chlorine minerals are measured, likely derived from the sea spray that blows over our village isthmus.\u003c\/p\u003e\n\u003cp\u003eThe rivers and streams of north Harris flow over Lewisian gneiss, \u003cstrong\u003esome of the oldest rocks on earth\u003c\/strong\u003e, dated by radiometric techniques at between 2.4 billion and 2.6 billion years old. Its hardness helps ensure the \u003cstrong\u003eextremely low minerality \u003c\/strong\u003eof our source water.\u003c\/p\u003e\n\u003cp\u003eAfter \u003cstrong\u003elonger fermentations\u003c\/strong\u003e and hands-on distillation in our bespoke copper stills, our\u003cstrong\u003e oak casks, \u003c\/strong\u003echosen when visiting Kentucky and Spain, are brought to bear. The \u003cstrong\u003echaos in the casks\u003c\/strong\u003e then ensues \u003cstrong\u003eby the shores of the Atlantic\u003c\/strong\u003e, near the west-coast village of Ardhasaig.\u003c\/p\u003e\n\u003cp\u003eDespite our northerly latitude, \u003cstrong\u003eour island’s oceanic climate\u003c\/strong\u003e benefits from the currents of the Gulf Stream. This system keeps \u003cstrong\u003eseasonal temperatures remain remarkably stable\u003c\/strong\u003e, which we believe benefits our maturation process.\u003c\/p\u003e\n\u003cp\u003eThe final, hard to define, element of our whisky-making is our natural way of working which \u003cstrong\u003ebrings patience to what we do\u003c\/strong\u003e, from fermentation to marrying.
